Mellow Spice Baked Salmon
A simple, family favorite — bold flavor, effortless prep.
A Flavor Story
This recipe started with a big salmon slab, a curious kid, and a love for bright, heritage-rich flavor.
In our home, salmon night means marinating with Mellow Spice for gentle heat and savory depth — then finishing with Heritage Heat or more Mellow Spice depending on your mood.
It’s the kind of weeknight dish that tastes like you put in hours… even though you didn’t.
Ingredients
For a 1–1.5 lb salmon fillet:
- 1 salmon slab (skin-on)
- 1–2 tbsp olive oil
- 1 tsp black pepper
- 1 tsp seasoned salt (any brand you use at home)
- 2–3 tbsp Mellow Spice (for the marinade)
- Heritage Heat and/or Mellow Spice (optional finishing drizzle)
Instructions
1. Preheat the oven.
Set to 400°F (205°C).
2. Prep the salmon.
Pat dry. Place skin-side down on a lined baking sheet.
3. Season generously.
Drizzle with olive oil, then add:
- black pepper
- seasoned salt
- 2–3 tbsp Mellow Spice
Massage evenly across the top to create a flavorful coating. Let it sit for 15–20 minutes to absorb the seasoning — or marinate it overnight in the fridge for even deeper flavor.
4. Bake.
Bake for 15–20 minutes, depending on thickness.
For doneness, check internal temperature:
- 125–135°F → tender & moist (chef-preferred texture)
- 145°F → fully cooked & USDA-recommended
Use whichever fits your comfort level — both are delicious.
5. Finish with flavor (optional but encouraged).
After removing from the oven, finish with:
- Heritage Heat for bold tang + a spicy kick
- Mellow Spice for warm, savory depth with sweet-tangy brightness
- Or a mix of both — the way our family does it
6. Serve.
Pairs beautifully with jasmine rice, vegetables, mango salad, or roasted potatoes.
Notes
- For crisp, golden edges, broil the last 2–3 minutes.
- In Waj’s YouTube episode, he used a generous ½ cup of Mellow Spice for big flavor — feel free to go bold!
- Works great with cod, tilapia, or even chicken.
